Some people call these Buckeyes but we have always called them Peanut Butter Balls.
Peanut Butter Balls
1 stick butter, soft at room temperature
1 cup good quality smooth peanut butter
2 cups powdered sugar
Mix all ingredients in a glass mixing bowl. Shape into 1" balls and place on cookie sheet. Place in freezer for 15 minutes. Remove and dip into melted chocolate but leave one end slightly uncovered to resemble a buckeye (or you can dip the whole thing if you prefer).
