Penne with pancetta, spinach and a buttery crumb topping

8oz french bread 3oz pancetta chopped 3/4 C onion 2tsp garlic minced 1/3 C AP flour 3 3/4 low fat milk 1/4 Half and half (I used FF, and it was perfect) 1 small box of frozen spinach thawed and drained 1/2 C Parmsean cheese shredded salt and pepper to taste 1pound penne pasta 1/4 C butter melted
cook pasta preheat to 425
place bread in food processor and pulse until bread is about the size of a baby pea. (10 times)
heat skillet with sprayed w/ evoo spray add pancetta, onion and garlic cook 5 mins until tender and browned a bit
in a bowl take flour and mix 3/4 C milk and whisk until smooth
add flour mix to the pan and stir.. add the remaining milk and half and half and bring to a boil.. stirring constantly. Add spinach and stir..add salt & pepper
drain pasta and place into a bowl pour the cream sauce over the pasta.. mix well and transfer to oven proof bowl sprinkle the crumbs over the top.. drizzle with melted butter
cook 6 mins or until browned on top
serve immediately!
***************** SO DANG GOOD******************* WOW this is a keeper for sure! we loved it.. the sauce had a real creamyness to it! totally delish! highly suggest giving this a whirl
I used FF half and half & milk.. you wouldnt even know it
