Gotta give props to the originator but this is my version - very basic.
Sam's Easy Garlic Mac n' Cheese
1 lb. box elbow macaroni
Sauce:
4 T. butter
6 cloves garlic, chopped or 2 T. pre chopped garlic
4 T. flour
4 c. milk
pinch freshly grated nutmeg
1/2 t. dijon mustard
1/2 t. salt
1/4 t. black pepper
dash Tabasco® hot pepper sauce
2 c. cheddar cheese
Topping:
3 T. butter, melted
3 pieces of bread
1 t. garlic powder
1 T. dried chives
1/2 t. paprika
Cook elbows until almost al dente - they will cook more in the oven.
While the pasta cooks make the cheese sauce.
In a medium saucepan melt butter over low heat. Add the garlic and cook on low 2 minutes. remove from heat and let it sit for 5-10 minutes to infuse the butter with the garlic flavor.
Process the dry topping ingredients in a food processor and stream in melted butter.
Set aside.
By now the pasta will be done. Drain it and set it aside.
Return butter to heat and add the flour to make a roux. let the flour cook for 2 minutes and add the milk a little at a time to get a smooth white sauce. Add seasonings. Continue to stir until sauce is thick enough to coat the back of a metal spoon. Add the cheese and let it melt.
Pour all but 3/4 c. of the sauce over the elbows. Mix thoroughly. Pour elbows into a deep 2 qt. casserole dish. Top with remaining cheese sauce. Spread it evenly. Top with buttered bread crumbs. Cook uncovered in a 350° oven for 30 minutes.
I made this to serve as a side dish one night. Dh loved it so much that after he ate his dinner he went into the kitchen and helped himself to a whole plate full of it. He woke up at 3am the next morning and couldn't get back to sleep so he ate another plate full of the mac 'n cheese. He had more for lunch the next day and by the time dinner came around again it was gone and he asked me to make more! I told him he's gonna have to wait a while or he'll explode! ;D ;D ;D ;D ;D
