Artichoke and Mushroom Pork Chops
4 pork chops 4 TBS butter 1 small onion, sliced 1 clove garlic, crushed 8 oz sliced mushrooms 1 can quartered artichoke hearts, drained 1/2 cup chicken broth 2 tsp spicy mustard
Melt 2 TBS butter in large skillet over med heat and brown chops on both sides. Set meat on plate and keep warm. Add the rest of the butter to skillet. Add onion, garlic and mushrooms. Saute until tender. Add artichokes, chicken broth and mustard and stir around to dissolve brown bits on bottom of pan. Add pork back to the pan and simmer 5 minutes. Spoon veggies on top.
